Today was Liberation Day here in Italia, so it was a holiday around these parts. It was also Bomba day. What is Bomba day, you ask? Well, it's the day you remove an old, unexploded, 4000lb WWII British bomb that was found in the area {here's a pic}. And what better way to celebrate those two events than by baking peanut butter cookies, right?
Seriously though, Heidi and I headed out to Nove this morning because of the happenings going on around town. I needed to pick up some pottery and then since we were "so close" we decided to stop by our favorite purse factory and grab a few necessities. After such a productive morning, my afternoon fell a little flat, so I decided to try out these "miracle cookies" that I had heard about from a friend. I'm assuming they are a miracle because they only have three ingredients. (Ingredients: peanut butter, sugar, and an egg…mine were all organic, so that has to count for something.)
I thought they were OK. They weren't as good as the ones my friend made so I might keep searching for the perfect miracle recipe, but they did satisfy my sweet tooth. Anyway…I really have nothing else to say about this topic so I'll just leave you with these pictures.
They have a really delicious flavor, but turned out a little too dry for me. I would have liked for them to be either chewier or crispier…maybe I'll tweak a few things and try again.
Also, it should be noted that TWO cookies WERE harmed in the making of these photos. They were consumed by a certain sneaky furry pup I know.
