Sunday Morning Pancakes


Darby decided we all needed to wake up at the crack of dawn this morning, so with a little extra time on my hands I decided to whip up some pancakes for breakfast.  Making a "from scratch" mix is super easy, so if you're finding yourself in the mood for a sweet breakfast give my recipe a try! 


Spice Pancakes
  • 1 1/2 cups flour
  • 1 tsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/8 tsp allspice
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 2 tbs melted coconut oil + extra for pan
  • 1 cup + 2 tbs milk (I use a half and half mixture of Lactaid and coconut milk)
  • 1 egg
  • 1 capful of vanilla extract
Whisk all of the dry ingredients together in a bowl.  In a separate bowl mix together the milk, melted coconut oil, egg, and a capful of vanilla extract.  Slowly fold the dry mixture into the wet with a spatula, stirring until just incorporated.  Heat a skillet to medium high heat.  Add a very small amount of coconut oil to the pan to prevent sticking.  Spoon 1/4 cupfuls of the pancake mixture into the skillet.  Cook about 3 minutest, or until bubbles have formed on the top of the pancakes. Flip and cook for another 2 minutes.  Serve with warm maple syrup (don't skip the warming part…it's a game changer!).



This recipe adds the perfect amount of spice and flavor and takes the already delicious pancake to another level!


If you happen to have any extra (a rare occurrence in this house), let them cool on a rack, place them in freezer bags and toss them in the freezer.  Popping one in the microwave for a few seconds makes for a quick but yummy breakfast throughout the week.
